Oil-free Hummus
2 cups of boiled chickpeas(retain enough liquid so chickpeas are submerged) or one 15 oz can of chickpeas
1 garlic clove
Juice of 1 lemon
¼-½ tsp of salt– may substitute 1 tsp of soy sauce(tamari)
1 ½- 2 tablespoons of tahini or 3 tablespoons of lightly roasted sunflower seeds
½ tsp of ground cumin(optional)
½ tsp of paprika(optional)
1-3 tablespoons of water or veggie broth may be added to achieve desired consistency.
If using sesame seeds, lightly roast them on low to medium heat in a skillet on a stove. Combine all ingredients in a blender and blend until smooth.
Oil-free Sunflower seed salad dressing:
1 cup raw sunflower seeds, no salt
1 1/2 cup water
1/2 cup apple cider vinegar(Braggs preferably)
1/3 cup regular soy sauce(organic preferably)
Place all ingredients in a Vita-mix or other high speed blender and blend. Can tweak the recipe to add more seeds or vinegar etc. to make it to your liking. Taste best after chilled.

In the Hummus recipe, is it intended to be ‘tahini or sunflower seeds’ as written, or ‘tahini or sesame seeds’ as it seems to be in the final, instructions, line of the recipe?
“1 ½- 2 tablespoons of tahini or 3 tablespoons of lightly roasted sunflower seeds”
“If using sesame seeds, lightly roast them on low to medium heat in a skillet on a stove. Combine all ingredients in a blender and blend until smooth. ”
I’ve only used tahini in the past, but would love to try using the seed in place. I’m assuming sesame as that’s what tahini is made from.

Good catch Ryan. Thanks for letting us know. It is supposed to say 3 tablespoons of lightly roasted sesame seeds. I’ll fix it shortly.
ReplyYou’re exactly right, tahini is made from lightly roasted sesame seeds. Infact, after lightly roasting the sesame seeds, just place them in the food processor. You do have to stir every couple of minutes but within 10 minutes you have home made tahini, without extra oil or salt.
